1 pound ground beef (or turkey): The main protein for the soup.

1 can (15 ounces) diced tomatoes (with juice): Provides moisture and acidity.

1 can (15 ounces) black beans (drained and rinsed): Adds fiber and protein.

1 can (15 ounces) corn (drained): For sweetness and texture.

4 cups chicken or vegetable broth: The base for the soup.

1 cup heavy cream: For creaminess.

1 cup shredded cheddar cheese: For flavor and richness.

Salt and pepper: To taste.

Tortilla chips (for serving): Adds crunch and texture


Instructions

Step 1: Brown the Meat

In a large pot or Dutch oven over medium heat, add the ground beef (or turkey) and chopped onion. Cook until the meat is browned and the onions are translucent, about 5-7 minutes. Drain any excess fat.

 

Step 2: Add Garlic and Seasoning

Stir in the minced garlic and taco seasoning, cooking for an additional minute until fragrant.

 

Step 3: Combine Ingredients

Add the diced tomatoes (with juice), black beans, corn, and broth to the pot. Stir to combine all the ingredients.

 

Step 4: Simmer the Soup

Bring the mixture to a simmer and cook for about 10 minutes, allowing the flavors to meld.

 

Step 5: Add Cream and Cheese

Reduce the heat to low and stir in the heavy cream and shredded cheddar cheese. Continue to cook until the cheese is melted and the soup is heated through, about 5 minutes. Season with salt and pepper to taste.

 

Step 6: Serve

Ladle the soup into bowls and top with tortilla chips for added crunch. Garnish with additional cheese, sour cream, or fresh cilantro if desired.
