Instructions
Step 1: Prepare the Ingredients
Slice the onions thinly and mince the garlic. Season the beef chuck roast generously with salt and pepper on all sides.
Step 2: Brown the Roast (Optional)
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side. This step adds flavor but can be skipped if you’re short on time.
Step 3: Layer the Ingredients in the Slow Cooker
Place the sliced onions at the bottom of the slow cooker. Add the minced garlic on top, followed by the browned roast. Pour in the beef broth, dry white wine (if using), and Worcestershire sauce. Sprinkle the dried thyme and rosemary over the top.
Step 4: Cook
Cover the slow cooker and set it to cook on low for 8 hours or on high for 4 hours. The roast will become tender and infused with the flavors of the onions and herbs.
Step 5: Shred and Serve
Once cooked, remove the roast from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker, mixing it with the onions and sauce.
Step 6: Prepare for Serving
To serve, ladle the French onion roast onto slices of French bread or baguette. Top with grated Gruyère or Swiss cheese and place under the broiler for a few minutes until the cheese is melted and bubbly.
