  • 1 packet taco seasoning (about 1 ounce)
  • 1 can (15 ounces) diced tomatoes (with green chilies, undrained)
  • 1 can (15 ounces) black beans (drained and rinsed)
  • 1 cup corn (frozen or canned)
  • 8 ounces cream cheese (cubed)
  • 3 cups uncooked pasta (penne or rotini)
  • 4 cups chicken broth (or beef broth)
  • 1 cup shredded cheddar cheese (plus more for topping)
  • Salt and pepper to taste
  • Chopped cilantro (for garnish, optional)
  • Sour cream (for serving, optional)


Instructions

Step 1: Prepare the Ingredients

  1. Brown the Meat: In a skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat if necessary.
  2. Mix Seasonings: Stir in the taco seasoning and mix well.

Step 2: Add to Slow Cooker

  1. Combine Ingredients: In the slow cooker, add the browned meat, diced tomatoes (with juices), black beans, corn, cream cheese, uncooked pasta, and chicken broth.
  2. Stir Well: Mix everything together until well combined.

Step 3: Cook
