- 1 can (15 ounces) diced tomatoes (with green chilies, undrained)
- 1 can (15 ounces) black beans (drained and rinsed)
- 1 cup corn (frozen or canned)
- 8 ounces cream cheese (cubed)
- 3 cups uncooked pasta (penne or rotini)
- 4 cups chicken broth (or beef broth)
- 1 cup shredded cheddar cheese (plus more for topping)
- Salt and pepper to taste
- Chopped cilantro (for garnish, optional)
- Sour cream (for serving, optional)
Instructions
Step 1: Prepare the Ingredients
- Brown the Meat: In a skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat if necessary.
- Mix Seasonings: Stir in the taco seasoning and mix well.
Step 2: Add to Slow Cooker
- Combine Ingredients: In the slow cooker, add the browned meat, diced tomatoes (with juices), black beans, corn, cream cheese, uncooked pasta, and chicken broth.
- Stir Well: Mix everything together until well combined.
Step 3: Cook
- Set Slow Cooker: Cover and cook on low for 3-4 hours or until the pasta is tender and the mixture is creamy. Stir occasionally to prevent sticking.
Step 4: Add Cheese
- Stir in Cheese: About 15 minutes before serving, stir in the shredded cheddar cheese until melted and creamy. Adjust seasoning with salt and pepper to taste.
Step 5: Serve
- Garnish and Enjoy: Serve warm, garnished with additional cheese, chopped cilantro, and a dollop of sour cream if desired.
