One Pan Lemon Herb Salmon & Potatoes Dinner Recipe

  • 4 salmon fillets (about 6 ounces each)
  • 1 pound baby potatoes (halved)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • 1 teaspoon lemon zest
  • 2 teaspoons dried Italian herbs (or a mix of thyme, rosemary, and oregano)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Lemon slices (for garnish)
  • Fresh parsley (for garnish, optional)


Instructions

Step 1: Preheat the Oven

  1. Preheat Oven: Preheat your oven to 400°F (200°C).

Step 2: Prepare the Potatoes

  1. Toss Potatoes: In a large bowl, combine the halved baby potatoes, 1 tablespoon of olive oil, salt, pepper, and Italian herbs. Toss until the potatoes are well coated.
  2. Spread on Baking Sheet: Arrange the seasoned potatoes in a single layer on a large baking sheet.

Step 3: Roast the Potatoes

  1. Roast Potatoes: Place the baking sheet in the preheated oven and roast the potatoes for about 15 minutes.

Step 4: Prepare the Salmon

  1. Season Salmon: While the potatoes are roasting, prepare the salmon. In a small bowl, mix together the remaining tablespoon of olive oil, lemon juice, lemon zest, minced garlic, salt, and pepper.
  2. Coat Salmon: Brush the salmon fillets with the lemon herb mixture.

Step 5: Add Salmon to the Pan

  1. Add Salmon: After the potatoes have roasted for 15 minutes, remove the baking sheet from the oven. Push the potatoes to one side and place the salmon fillets on the other side.
  2. Garnish with Lemon: Place lemon slices on top of the salmon.

Step 6: Finish Cooking

  1. Roast Together: Return the baking sheet to the oven and roast for an additional 12-15 minutes, or until the salmon is cooked through (internal temperature of 145°F or 63°C) and flakes easily with a fork.

Step 7: Serve

  1. Garnish and Enjoy: Remove from the oven, garnish with fresh parsley if desired, and serve warm.
