- 4 salmon fillets (about 6 ounces each)
- 1 pound baby potatoes (halved)
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice (about 1 lemon)
- 1 teaspoon lemon zest
- 2 teaspoons dried Italian herbs (or a mix of thyme, rosemary, and oregano)
- 2 cloves garlic, minced
- Salt and pepper to taste
- Lemon slices (for garnish)
- Fresh parsley (for garnish, optional)
Instructions
Step 1: Preheat the Oven
- Preheat Oven: Preheat your oven to 400°F (200°C).
Step 2: Prepare the Potatoes
- Toss Potatoes: In a large bowl, combine the halved baby potatoes, 1 tablespoon of olive oil, salt, pepper, and Italian herbs. Toss until the potatoes are well coated.
- Spread on Baking Sheet: Arrange the seasoned potatoes in a single layer on a large baking sheet.
Step 3: Roast the Potatoes
- Roast Potatoes: Place the baking sheet in the preheated oven and roast the potatoes for about 15 minutes.
Step 4: Prepare the Salmon
- Season Salmon: While the potatoes are roasting, prepare the salmon. In a small bowl, mix together the remaining tablespoon of olive oil, lemon juice, lemon zest, minced garlic, salt, and pepper.
- Coat Salmon: Brush the salmon fillets with the lemon herb mixture.
Step 5: Add Salmon to the Pan
- Add Salmon: After the potatoes have roasted for 15 minutes, remove the baking sheet from the oven. Push the potatoes to one side and place the salmon fillets on the other side.
- Garnish with Lemon: Place lemon slices on top of the salmon.
Step 6: Finish Cooking
- Roast Together: Return the baking sheet to the oven and roast for an additional 12-15 minutes, or until the salmon is cooked through (internal temperature of 145°F or 63°C) and flakes easily with a fork.
Step 7: Serve
- Garnish and Enjoy: Remove from the oven, garnish with fresh parsley if desired, and serve warm.
