Instructions

Step 1: Prepare the Marinade

In a bowl, combine 1/4 cup of brown sugar, 1/4 cup of soy sauce, 2 tablespoons of Dijon mustard, 2 minced garlic cloves, and 1 teaspoon of ground ginger. Mix well until the sugar is dissolved.

Step 2: Marinate the Pork

Place the 1 pound of pork tenderloin in a resealable plastic bag or a shallow dish.

Pour the marinade over the pork, ensuring it is evenly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

Step 3: Preheat the Oven

Preheat your oven to 400°F (200°C).

Step 4: Bake the Pork Tenderloin

Remove the pork from the marinade, allowing any excess to drip off. Reserve the marinade for later use.

Place the pork tenderloin in a baking dish and top it with 1 cup of diced fresh pineapple.

Pour the reserved marinade over the pork and pineapple.

Bake in the preheated oven for 25-30 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

Step 5: Rest and Serve

Once cooked, remove the pork from the oven and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute for maximum tenderness.

Slice the pork tenderloin and serve it with the pineapple and sauce, garnished with chopped green onions.
