Instructions
Step 1: Prepare the Ingredients
Begin by preparing all your ingredients. Chop the onion, carrots, celery, and potatoes into bite-sized pieces. Mince the garlic and set everything aside.
Step 2: Layer the Ingredients in the Slow Cooker
In the slow cooker, layer the diced potatoes, sliced carrots, sliced celery, and chopped onion at the bottom. Place the chicken thighs on top of the vegetables.
Step 3: Add Broth and Seasonings
Pour the chicken broth over the chicken and vegetables. Sprinkle in the dried thyme, dried rosemary, paprika, salt, and pepper. Stir gently to combine, ensuring the chicken is submerged in the broth.
Step 4: Cook the Stew
Cover the slow cooker and set it to cook on low for 6-8 hours or high for 3-4 hours. The chicken should be tender and easily shred with a fork when done.
Step 5: Add Peas and Thicken (Optional)
About 30 minutes before serving, stir in the frozen peas. If you prefer a thicker stew, mix 2 tablespoons of cornstarch with a little cold water to create a slurry, then stir it into the stew. Let it cook for the remaining time to thicken.
Step 6: Serve
Once the stew is cooked, taste and adjust the seasoning if necessary. Ladle the stew into bowls and garnish with fresh parsley before serving. Enjoy with crusty bread or over rice for a complete meal.
