1 package (32 oz) frozen tater tots: For a crispy topping.

Instructions

Step 1: Prepare the Chicken

Start by trimming any excess fat from the boneless, skinless chicken thighs and cutting them into bite-sized pieces if desired.

Place the chicken in the bottom of the Crock Pot.

Step 2: Make the Sauce

In a mixing bowl, combine 1 cup of brown sugar, 1 cup of soy sauce, 1/2 cup of bourbon, 1 tablespoon of minced garlic, 1 tablespoon of minced ginger, and 1/4 cup of ketchup. Whisk together until well blended.

Pour the sauce mixture over the chicken in the Crock Pot, ensuring all pieces are well coated.

Step 3: Cook the Chicken

Cover the Crock Pot and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and tender.

Step 4: Thicken the Sauce

About 30 minutes before serving, mix 1 tablespoon of cornstarch with 1 tablespoon of water in a small bowl to create a slurry.

Stir the slurry into the sauce in the Crock Pot and let it cook on high for an additional 30 minutes to thicken.

Step 5: Serve

Once the chicken is tender and the sauce has thickened, serve the bourbon chicken over rice or noodles.

Garnish with sliced green onions for a pop of color and freshness.
